Summer Crock Pot Quinoa (a Recipe)

My friend and fellow health coach, Erin Statter of Well Rebellion, invited me to give a fun summer event with her- a “Girl’s Night Out.” It’s scheduled for July 22, so we are busy preparing. We wanted to come up with a few recipes for summer, using seasonal produce and NOT involving an oven!

Ingred-Cr.Pot Quinoa-Zuc

This easy recipe uses summer garden veggies and quinoa, which is great for most people who can’t eat wheat/gluten, plus, it’s high in protein! We’ll cook it in the crock pot so that we won’t have to heat up the kitchen. However long it takes you to cut up a few veggies and throw them in the pot is how long this recipe will take you to prepare, besides the cooking time, which you can adjust according to your plans for the day. If you’ll be leaving the house for several hours, you can turn your pot on low and leave it for about 6 hours, depending on the exact temp of your pot, humidity, etc. If you want to put dinner on just a couple of hours before you sit down to eat, set your pot to “hi,” and it will be ready in about 2 hours.

What you need:

1 ½ C quinoa, well rinsed- quinoa is bitter if un-rinsed. Some brands pre-rinse, so check the label.

3 C veggie stock

1 T olive or coconut oil

¼ C dried unsweetened cranberries

¼ C raisins

¼ C sliced or slivered almonds or chopped pecans

1 C diced zucchini

1 C diced carrot

½ C chopped scallions

½ t. salt

½ t. cinnamon

Black pepper to taste

What you do:

Simply load all these ingredients into the pot and come back later to enjoy! If you don’t have much time, you can throw in baby carrots as is, and cut your zucchini in bigger chunks rather than dicing.

Cr.Pot Quinoa-Zuc-uncooked

This dish is yummy served on a bed of spring greens, topped with crumbled feta or seasoned tempeh. It also makes a fine main dish with a side of any meat or fish. Try adding a favorite sauce for added flavor.
